Bang Bang Broccoli
This recipe is one of my go-to’s and an ultimate favorite of mine. It makes for the perfect side and the added bonus to the amazing taste is that it’s also healthy. It has just enough spice to it and it reminds me of a boneless chicken wing but better. This side will make you famous if you bring it to a party. Side note: you can make this recipe vegan-friendly as well. I actually imitated this recipe from a vegan restaurant in Miami, Planta Queen.
What you'll need:
(For spicy mayo)
½ tsp maple syrup
2 tsp sriracha
4 tbsp vegan mayonnaise
1 tsp sweet chili sauce
(For Broccoli)
1 head of broccoli
Salt & pepper
½ tbsp onion powder
½ tbsp garlic powder
1 tbsp of sriracha
1 tbsp apple cider vinegar
6.3oz panko breadcrumbs
8.1 fl oz evaporated milk or coconut milk.
1.4oz flour
The Steps:
Line a tray with baking paper & preheat your oven to a temperature of 400 degrees.
Trim broccoli into smaller pieces/florets.
In a low rise bowl, add your flour.
In a separate low rise bowl add your apple cider vinegar and soya milk or coconut milk. Stir and leave sitting for a few minutes. Finally, include your hot sauce and stir to combine.
Next, get out a third bowl to which you will add your breadcrumbs, onion & garlic powder, and lastly your salt and pepper. Stir.
Dip your florets into your flour dish, then into the milk/liquid dish, and finally into the bowl of breadcrumbs and seasonings. Ensure each floret is fully coated. Place on your baking tray.
Bake 20-25 mins (or until golden).
During this time, combine all of the spicy mayonnaise ingredients together.
Once the florets are ready, transfer to a mixing bowl and your add spicy mayo. Toss to be covered. Transfer to a serving bowl/plate.
Add your everything bagel seasoning on top, and ENJOY!
