Sweet Potato Salad

This dish is perfect for anyone looking to broaden their horizons when it comes to a fresh, healthy, inexpensive meal. It consists of minimal ingredients, its super filling, and really delicious. It is even vegan and vegetarian friendly!

What you need:

  • 3 medium to large Sweet Potatoes

  • 1 box of Couscous

  • 1 bag of Spinach

  • 1 Container of Grape or Cherry Tomatoes

  • Balsamic Glaze

  • Onion powder, Garlic powder, and a little bit of Salt.

Steps:

  • Start by cutting your tomatoes in half, set to the side.

  • Then boil your water and start cooking sweet potatoes until soft. You should be able to stick a fork through them. In a separate pot, boil water and cook the couscous.

  • Once both are done, strain the water, peel the sweet potatoes and cut them into bite sized pieces. Strain the couscous and combine with the sweet potatoes in a large serving bowl.

  • In a pan heat up some olive oil, once heated, throw in the bag of spinach and the tomatoes.

  • Let cook for about 15 minutes on medium or until spinach is fully cooked and tomatoes are soft.

  • Combine everything in the large serving bowl, the tomatoes, the spinach, the couscous and the sweet potatoes.

  • Sprinkle the seasonings and mix.

  • Lastly, serve on a plate with a nice drizzle of balsamic glaze!
